A wood-fired oven. Maybe because the salad was drenched in dressing? I couldn't taste any saltiness in the dough. The mozzarella had a slight texture, but no real flavor and no milky richness either. The dough wasn't crispy at all—is this what they mean by a chewy style...? The cornicione wasn't particularly dry or coarse, but... I realized once again that I prefer crispy-style pizza. Above all, both the dough and mozzarella were flavorless, leaving me with the impression of nothing but the acidity of the tomatoes. The coffee was also extremely weak. Since it was served together with the salad, it was lukewarm too. Sorry for being so critical.

A large wood-fired oven. Ordered a Margherita. Served in about 15 minutes. It was a large 28 cm pizza, and the charring on the cornicione, surface, and bottom was just right. The mozzarella had a pleasant acidity and an excellent texture, while the basil was highly aromatic and incredibly delicious. The dough had almost no saltiness, but combined with the moderate char, even the crust was delicious. They use a blend of four types of flour and ferment the dough for more than 48 hours. More research is needed. If I could make this, I could sell it.

The huge amount of cheese is insanely delicious! The all-you-can-eat rice that comes with the set goes so well with it! I was overwhelmed by the ridiculous amount of cheese!

Depending on the day, the Chinese cabbage from different regions is sweet and goes perfectly with the tanmen. Adding the homemade chili oil makes it even better! It’s quite spicy, so be careful not to add too much. If you like cilantro, the cilantro topping is also recommended!

New York–style sliced pizza. A large gas oven gives it an authentic feel. Baked at about 350℃. Two 1/8 slices larger than a palm, so the volume is satisfying, The taste isn’t bad, but the cheese has a heavy, bland flavor, making it overall closer to fast food. The freshness of the tomato and the crispness・ and juiciness are weak, giving a dry, somewhat mushy impression. This may be a characteristic of New York–style pizza, assuming it’s not freshly made. Reconfirms that I’m a Neapolitan pizza person.
